Say I have out a Gorilla Shaman, a Mox and a Leonin Abunas and my opponent steals my turn. Is my opponent prevented from using my monkey to eat my mox?

Your opponent just controls your turn. You still control your permanents. Hence, your Gorilla Shaman will be able to eat your Moxens.
