So my opponent puts an eye of the storm into play via show and tell. Then he plays Swords to Plowshares hitting dude 1 then brainstorm and uses STP to hit dude 2 ( i now have no guys left). Then he passes turn.

I cast smallpox, he responds by casting reset then the EoS brainstorm, and finally force of will on my smallpox.

Now my questions are : once I cast smallpox, what happens and what does my opponent need to do to correctly counter smallpox ? Do all the removed spells get put on the stack simultaneously or in some kind of order ?

When you cast Smallpox, it is removed from the game, put under EotS, and doesn't resolve.  Then you can play each spell that is removed from game and placed under Eye of the Storm (StP, Brainstorm, Smallpox).  Technically, what happens here is that all three of those are copied and you can play any number of them during the resolution of the EotS trigger.  You get your chance to play them; if you don't, the copies disappear immediately.  Then your opponent plays Reset, and gets to copy (Reset, StP, Braisntorm, Smallpox).  Then he casts Force of Will, and gets to copy (Force of Will, Reset, Brainstorm, Smallpox, StP).  If you have an instant, you could play it and get to play as many of those spells as you wanted as well.

Does that make sense?

That creatures this infinite loop where you play spell A from EoTS which allows you to play spell B which allows you to play spell A ...ad infinitum. I think it triggers once per actual spell cast ( which is subsequently removed with Eye ), but not by playing copies.

How does it work under the assumption that it only triggers once per actual spell cast?

They don't trigger off the copies played.  You misunderstood me or I misspoke.

By the way, you never cast spells, you just play spells and spell cards.  When you play a sorcery or instant card, Eye of the Storm's triggered ability goes on the stack.  When it resolves, it removes the card from the game and copies the cards removed from the game by EotS.  During the resolution of this trigger, the trigger itself lets you play any of these copies.  If you do play them, they go on the stack, and if you don't play them, they cease to exist at the end of the trigger.

NAP: Play Swords to Plowshares.  EotS triggers, copies StP and NAP can play it.
NAP: Play BS.  EotS triggers, copies BS and StP; NAP can play both, either or none.
AP: Play Smallpox. EotS triggers, copies BS, Smallpox, StP; AP can play any number of them.
NAP: Play Reset.  EotS triggers, copies BS, Smallpox, StP, Reset, NAP can play any number of them.
NAP: Play Force of Will.  EotS triggers, copies BS, Smallpox, StP, Reset, FoW, NAP can play any number of them.

So if Active Player has another instant in hand (for instance Repeal), they could do the following:
Response to the copy of Force of Will: Repeal targeting a legal target.  Eye of the Storm triggers and removes Repeal from the game.  Repeal's removed cards: Swords to Plowshares, Brainstorm, Smallpox, Reset, Force of Will, Repeal.  Each of those spells are copied.  Active Player can play as many of them as they want (note X=0, so you need a legal target to play it with CMC=0).  So they could do: "play Reset, Force of Will targeting your Force of Will, Smallpox, Reset, Swords to Plowshares targetting your guy."

Make sense?

Indeed.  Eye of the Storm has a triggered ability, and can be responded to.  If you play Smallpox, I can respond to EotS's triggered ability to remove it from the game by playing Counterspell, targetting Smallpox.  Then Counterspell gets RFG and I copy everything RFG by Eye of the Storm.  Of course, if you have a response, you can cast an Instant and get to copy my Counterspell...

With Eye in play, when an instant or sorcery CARD is played, eye will trigger (of course).  When the trigger resolves, Eye will first remove that card from the game (if possible).  Then you get to make copies of all the cards already removed by Eye and play whichever copies you want.

The copies are played one at a time in whatever order the player so chooses.

While Eye's trigger is on the stack other spells/abilities can be played.  If a spell that triggers Eye is no longer on the stack when the Eye's trigger resolves, the trigger will still do as much as possible.  It won't be able to remove the spell card from the game, since it's not there to remove.  It will still do everything else, make copies of everything removed by it, and let you play those copies.

Also, you are actually PLAYING the copies, not simply putting them on the stack.  So, they follow all the rules for playing spells (Rule 409), including any required additional costs.  For a shrapnel blast you would have to sacrifice an artifact, if a trinisphere was in play, you'd have to pay 3 for each spell.

Also because you're playing the spells, various effects can prevent you from playing them.  If your opponent has a Teferi in play, you won't be able to play any of the copies (Eye's trigger is still on the stack, so it's not a time you could play a sorcery).  If any of the copies have split second then once you choose to play that copy, you won't be able to play any of the other copies.

Any of the copies created by Eye of the Storm that you choose not to play will cease to exist as soon as state-based effects are checked.
