Hi guys!

Does cabal ritual count itself in the graveyard when it resolves? (if it is the seventh card, do I get 5 mana?)

No. During the resolution of a spell, the card is in the stack zone. It does not get moved from the stack to the graveyard (or battlefield, or whatever zone) until the resolution is complete.
