I'm a little confused by the wording of Berserk, The Stack and when the current turn's Attack is completed.

If my opponent attacks with his Exalted Angel, can I wait until after he puts his damage on the Stack to Berserk and kill the creature?

No.

Berserk

Instant
Play Berserk only before the combat damage step.
Target creature gains trample and gets +X/+0 until end of turn, where X is its power. At end of turn, destroy that creature if it attacked this turn.

Damage goes on the stack in the combat damage step.  There is no way to play berserk after Combat Damage is on the stack.

What about creatures with first strike or double strike?  Can you berserk a first striker after he deals his early damage and then let the rest of the damage resolve?  Or are both considered a part of the combat damage step with a time where you receive priority in between?

Each is their own combat damage step.

You must play it before your first combat damage step, and you cannot play it during that combat damage step before the next one.
