Enchantment

Whenever a creature you do not control deals damage to a player, put a 3/3 Elephant Token into play.  Whenever a 3/3 Elephant token is put into play in this manner, destory all other Elephant Tokens in play except those that came into play this turn.

EDIT: Fixed to work as a I intended.

Explanation:
Green has several defensive effects: Fog comes to mind formost, but it seems that a card of this would have interesting combat properties.

How about:

Whenever a creature an opponent control's deals damage to a player (you?), put a 3/3 green Elephant creature token into play. Then, destroy all Elephant tokens you control except those that came into play this turn.

The last sentence is slightly unorthodox, but it works.

The (you?) comment is basically asking: how good do you want this to be in multiplayer?

I agree that it should only destroy elephant tokens you control. Granted, there's not a huge chance that your opponent will happen to be playing an elephant token deck, but it doesn't really violate the flavour to suppose that he controls a different herd of elephants, so that there's no problem with his doing his bidding and yours protecting you.
