Here is a rumored card in the new set:

quicken - U
Instant
The next sorcery spell you play this turn can be played any time you could play an instant.
Draw a card.

If you played 2 or more copies of this card in a row, does that mean you can play 2 or more sorceries at instant speed? Or do all the quickens apply only to the first sorcery played that turn?

If it is worded right, it says the next Sorcery can be played as an instant. That would mean that if you played 2 Quicken, the next 2 Sorcery could be played as instants. If you are familiar with Standard at all, it would be similar to 1 players playing 2 Yosei causing the opponent to skip the next 2 untap phases.

Yosei is another Problem. On Yosei there stands "skip" what means this is a replacement effect and you can only replace something you have. So 2 Yoseis means you skip one untap  but theres always one more effect to wait for the next untap.

Quicken says only "next" , like Overamster or Exhaustion. If you play 2 they both address the same sorcery (the next) so only one spell can be played as instant (not two).

You are correct about how Yosei works, but be careful with "replacement."  Yosei doesn't set up any replacement effects, it simply causes something to not happen.  When two Yosei hit the yard, there's two triggers.  Each trigger says "skip the next untap phase," and you only skip something when it's there to skip.  Since the first Yosei makes the next turn's untap phase never happen, the second Yosei doesn't see it, so it waits for the next one to occur.

This is similar to this: let's say you activate a Mindslaver on your opponent, and in response, he plays Meditate.  You then take another turn, since your opponent skips his next one that would happen, and then you get to control the turn he takes after that.  Mindslaver looks for the next turn that occurs, whenever that is.  Yosei does the same thing.

Quicken looks for "the next" sorcery you play, so playing two in a row does not allow you to play two sorceries at instant speed in a row.  To achieve that, you'd need to play Quicken, a sorcery, another Quicken, and then another sorcery.

Actually, skip effects such as Yosei are replacement effects.
