I have always belived that you can only use Genesis' reccuring ability once per upkeep as it is a triggered ability. Is this right?

There is only one beginning of upkeep each turn, so it only triggers once. If you somehow got two upkeeps (not possible yet but who knows what they may print someday), it would trigger twice - once on each upkeep.

Ok. for some glitch of some sort, I started to reason that I can pay as much mana after it's triggered to bring however much creatures my mana can afford. Just that I need to do it on my upkeep.

For that to happen it would either have to be an activated ability (like its counterpart Glory) or say "At the beginning of your upkeep, if Genesis is in your graveyard, you may pay {2}{G} any number of times. For each {2}{G} you paid in this way, return target creature in your graveyard to your hand."

Also note that you have to choose your target at the time Genesis' ability goes on the stack, before you have a chance to do anything else. So you cannot put the trigger on the stack, then discard something to Wild Mongrel and return it; you would have had to discard on your opponent's turn. This is another common Genesis mistake.
