Concerning Everrid's list, I have a few suggestions I would like to make. Jotun Grunt should definitely be more than a 2'of. Dont even plan on drawing it or even effecting your game at all with just two maindeck. I suggest running three at least, four may be overkill, but two seems far too little.
With six one-drops MD, and two more in the board, I think Ninja should also be more than a 2'of. It is UW Fish's only real draw engine besides Brainstorm/Ancestral, and in my opinion that is what I think is UW's biggest problem, so you should definitely run 3-4. I ran four in a UWb list and they were amazing, not once were they a burden to me because at least I was able to pitch them to Force of Will.
Your sideboard seems like mostly Fish hate to me (Jitte, Swords, Grunt, Old Man), which seems kind of stupid because Fish is designed to take out "better" decks, not so much itself. I am not saying "dont run any Aggro-hate", I am more so encouraging you to use less slots on one specific archetype. Jitte can stay, Swords should be maindecked, same with Grunt, but Old man doesnt seem at all necessary.
With so many artifacts and enchantments in your board, I have found that SBing Enlightened Tutor to work as an additional... everything. I also like to run 2 Seal of Cleansings, and 1 Disenchant (so you can both Mystical and Enlightened Tutor for them.)
If you run Enlightened it is the equivalent to running four Jittes, four Seal of Cleansings (when you only need to run two, along with a single Disenchant), five Null Rods, and so forth. Sacred Ground seems like a real good card in addition to Enlightened Tutor because it makes the Stax matchup amazingly easy, Energy Flux is similar.
But that is all I've got to say about your deck, even if that was in fact a lot. I will return with feedback on the topic's starter (Beast) after I review the deck a little more.
