Ok, the opponent casts an Infernal Tutor or Burning Wish, in response he sacrifices LED and discards his hand, and he searches for a Sorcery and puts it in his hand; at which point can I cast Piracy Charm or Funeral Charm in order to force him to discard his only card?

This won't work.

The new card is not in the player's hand until after Burning Wish resolves. Once Burning Wish has resolved, the stack is empty, at which time the person whose turn it is becomes the active player. Because this is your opponent's turn, he is the active player. Therefore, he may cast the spell he received from Demonic Tutor before you have the chance to cast Piracy Charm.
