So I'm pretty anal about the way I shuffle after a game, usually taking out all the land and doing the whole 2 cards - land thing to equally divide land through my deck ( and then of course doing ample shuffling and offering my opponent the opportunity to do the same). I this strictly speaking, legal? No one has ever complained about it but I thought I'd just make sure.

Also, I was unable to find anything about this in dci policies, but are you allowed to tap cards the old way? (meaning slightly diagonally and not sideways)

This is the key.  You can do whatever you want to your deck, time permitting, as long as you present a fully randomized deck at the end.

Also, I was unable to find anything about this in dci policies, but are you allowed to tap cards the old way? (meaning slightly diagonally and not sideways)
I'm not sure that slightly diagonal was the old way or not, but as long as it's clear to all players what is and is not tapped, it's acceptable.

There's nothing wrong with slightly diagonal, as long as it's visibly clear what is tapped and what is untapped.  That's really the deciding factor, that it's visibly clear.

The older-school someone is, the more likely they are to tap 45 instead of 90 degrees from what I've seen. It's still legal, though.

Good to know! At regionals back in july someone kept tapping my cards to 90 degrees (just my attacking creatures) and was a real jerk about it, but I didn't want to bother a judge with it.

Were I called over as a judge to handle that situation, I would have the cards turned to 90 to ensure there was no confusion.  It does tickle me to hear people talking about revised like it's the oldest of the old school.  Most people 1st got their hands on revised at least a year after Alpha came out.  I remember when revised came out, some people who never read the rules somehow misconstrued the new Tap symbol to indicate the degree to which cards should be tapped.  This was completely unfounded, as the rules were always clear about what it means to tap a card.  Enjoy the Beta Rule Book

You'll see that it's very clear as to what tapping means.  That said, so long as your opponents are not confused by it, it's really not a big deal.  Of course, if it's going to bother you when people correct you, it's worth tapping correctly to prevent getting off your game due to aggravation.
