I have a question in regards to Goblin Bombardment and Oath tokens.

EOT he floats a mana and gives me a Token. Is there a window of opportunity where I can sac the token before the turn ends? Can someone explain to me how the priority thing works exactly because I am under the impression that if I pass priority to him and all he does is float a mana, I do not get priority back...

Forbidden Orchard being tapped puts a triggered ability on the stack.  Players get a chance to respond, and the active player (you) gets priority after it resolves, so yes you can sack the token before the end of your turn.

Irregardless of the triggered ability, you will still receive priority again if your opponent plays a mana ability.  For a phase/step to end, both players must pass in succession without doing anything.  This is not limited to actions which put an object on the stack, but also activating mana abilities or taking a special action which doesn't use the stack (i.e. playing a land, paying the morph cost to turn a face-down creature face-up).

So lets say I play a Mox Sapphire and my opponent has a Gorilla Shaman in play. I have a Tinker in hand. Does my opponent get any priority in between me resolving Mox Sapphire and me wanting to play Tinker?

Not unless you (unwisely) choose to pass priority first, after Sapphire resolves, the stack is empty and you have priority to play sorcery speed spells.

Just to be clear, this is assuming you played the Mox Sapphire during your turn (i.e. you didn't play it during your opponent's turn with Vedalken Orrery or some such shenanigans).
