Since they haven't been mentioned, I'll just recommend a few of my favorites:

American Psycho
Super Troopers

Vanilla Sky (yes, I know it's a remake of a foreign film and I know how you people love your foreign films and all, but the original doesn't have Tom "Oh my god! He's so hot!" Cruise getting his grill mangled, a super-sweet-ass soundtrack and Jason Lee, nor does it have Penelope Cruz (good lord do I hate that bitch) AND Cameron Diaz (good lord do I hate that bitch even more) getting killed)

Fear And Loathing In Las Vegas (if you've never consumed an assload of hallucinogenic substances at some point in your life, you probably wouldn't get it (which might explain why nobody has listed it yet))

28 Days Later (if you've never been infected with rage at some point in your life, then you probably wouldn't get it (which might explain why nobody has listed it yet))

Boogie Nights (if you don't have a fourteen-inch penis, then you probably wouldn't get it (which might explain why nobody has listed it yet) but it's yet another good P.T. Anderson flick)

Mentioned Ad Nauseum:

Fight Club:  Mischief.  Mayhem.  Soap.  The greatest movie of all time.

Mentioned Before:

Mulholland Drive:  Don't bother watching this unless you've taken at least one class in literary devices and interpretation, it probably won't make any sense.

Blue Velvet:  My first Lynch movie.

American History X:  Very compelling rendition of a pressing social problem that doesn't preach at the audience.

Pulp Fiction:  Tarantino's best film, in my opinion.  Hyperreality and pop culture.

Mystic River:  The story unfolds in a setting 3 miles from my house.  Being a part of the community depicted made this even more meaningful for me.

28 Days Later:  One of the scariest movies I've ever seen, and they did it all on a B-movie budget.  

Not Mentioned:

White Oleander:  Released in 2002.  The story of a fosterchild attempting to navigate through the labyrinth of an indifferent social services system and several troubled figures in her life, all while trying to come to terms with the lingering trauma inflicted on her by her biological mother.  Surprisingly deep for something that the WB was involved with.

The Texas Chainsaw Massacre:  Re-released in 2003.  Some unfortunate travelers happen upon an isolated Texas town and THEY GET FUCKED UP BY THIS HUGE DUDE WITH A CHIANSAW!  ...I spent four years working in a movie theater, and I have never seen this before, nor have I seen it since-- people actually got up in the middle of the film and fled the building in terror.  It was so scary about 15% of the audience couldn't take it.

Closer:  Released in 2004, out of theaters but I don't think it's on DVD quite yet.  The most brutally honest depiction of romance and relationships in the post-sexual revolution culture.  Amazingly deep if you look past the...vulgar dialogue.  In fact, the vulgar dialogue itself has a symbolic purpose.

The Secretary:  Released in 2001.  Don't see this if you're under 18 or you're not exceptionally open-minded.  

Pet Sematary:  Released in the late 80's/early 90's.  It's the best cinematic adaptation of a Stephen King book out there.  Watch it and you'll see why.
