Yes, your opponent can just tap all their lands at the end of their turn to prevent you from syphoning their mana on your turn (only creature, enchantment, and sorcery cards have syphon), but not if they want to play instants or other reactive spells... Cancel, Holy Day, Vines of Vastwood, etc.

I also have cards in my set that circumvent opponents with tapped lands. For example, the Explorer cycle:

I don't know how I feel about the "balls to the wall" theme.  Basically, both players should tap as many lands as early as possible to avoid syphon.  The explorers basically just put Utopia Tree in every color with random resilience to removal.  As such, the set strikes me as a Timmy favorite: the players are encouraged to play big, splashy spells as early and often as possible.
