Suppose I have 4+ creatures in my graveyard before my upkeep phase.

Is there any way to stack the upkeep costs of a card (one with Echo or Fading, for example), so that the creature goes to the graveyard and I am subsequently able to return it to my hand using Oversold Cemetery?

In general, no.  When oversold cemetery triggers, you must choose a target creature card to return.  Thus, the targeted creature must be in the graveyard before your upkeep step.

Corner case:
1) Target some creature card in your graveyard for Oversold Cemetery.
2) Then let the echo/fading creature die.
3) Flip over Willbender to change the Oversold Cemetery ability to the echo/fading creature card that is now in the graveyard.
4) Get back said creature when Oversold Cemetery ability resolves.
