Hey I'm running a type one Tournament at my store this saturday. I expect about 12-16 people.  It occured to me that i have no idea how to run one. my best guess is run a 3 round swiss and then a top 8. sound about right?

Read the top section.  Ignore the part about the sample scorecard, unless you're actually filling those out.  I'd also recommend that you not play in this event.  Just run it, and it will go a lot more smoothly.

You might want to go 4 rounds swiss and top 4 instead of 3 rounds swiss and top 8 (same # of total rounds).  It seems silly to have 50-75% of the field make the "top 8".  We typically have 16-20 at our store and 4 rounds with top4 works great.
