What is the functional difference between "All creatures lose all abilities and are 1/1" and "All creatures lose all abilities. Humility gains 'All creatures are 1/1?"

It clears up interaction between Humility and Opalescence.

People that aren't so solid on the rules can now understand why the rules do what they do without nearly as much hassle.

In a nutshell, it allows Humility to keep the ability that resets power and toughness.

Previously, it would be removed before it could be applied.

This left you with a 4/4 Humility.
