If you skip your end phase or EOT step, "at end of turn" triggers will still trigger during the next EOT correct?

Does it matter if the trigger is a delayed trigger such as Memory Jar?

The delayed trigger will wait around until the event it triggers on actually happens, unless it has some specific qualifier that says otherwise (such as "this turn").

Memory Jar will wait for the next End of Turn step for its delayed trigger to go on the stack.

An example of a trigger that is skipped entirely is Final Fortune.

Time stopping your final fortune turn prevents you losing as a result of the final fortune effect.
