what happens if at the end of your opponents turn you untap time vault by skipping your turn and then tap it for an extra turn?

You skip your next available turn--the extra one Vault gives you.

Basically, extra turns are processed in the order they're created.  So here's what happens.  Normal turn order stack looks like this
*Opponent* (active turn)
You
Opponent

Now skip your next turn to untap Time Vault:
*Opponent*
You
Opponent

But now you tap the Vault to tap another turn:
*Opponent*
You
Opponent

So the answer is that nothing actually comes out of this play.

Basically, extra turns are processed in the order they're created. 

I don´t know what you are saying here, but it looks contradictory to:

300.6. Some effects can give a player extra turns. They do this by adding the turns directly after the current turn. If a player gets multiple extra turns or if multiple players get extra turns during a single turn, the extra turns are added one at a time. The most recently created turn will be taken first.

Doesn´t really matter for the answer: if you do those actions at any time in any turn, the result will be nothing. You skip a turn and take an extra turn, two effects that cancel each other out

So untapping Time Vault (and thus skipping your next turn) and tapping Time Vault( taking an extra turn) can be done as much as you like, with no real net effect, unless some form of bounce or removal gets involved. Someone can bounce/weld/remove your time vault in response to your "untap Time Vault: Put a time counter on Time Vault" ability, robbing you of the option to then tap it and remove all time counters to get your turn (since the add a counter part hasn't resolved yet). Be aware!

Yes, but you cannot use it to stall the game, just like you cannot waste 10 minutes by saying "I'll redirect the next one damage that would be dealt to Nomad En-Kor" 10000 times to stall.
