If I have one sorcery card in hand, can I announce the spell and pay its mana cost using Lion's Eye Diamond?  Or is this impossible as I need to discard the card in order to use the LED for mana?

You can't because LED has been errata'd. You can use its ability only any time you could play an instant, and you cannot play an instant between declaring a spell and paying for it.
