So I haven't played with creatures for years, so this should be simple for most people. 

I have a ninja of the deep hours and another dude attacking.  My opponent has no creatures in play.  He bounces my ninja.  Can I ninjitsu my other attacking creature out so i can deal 2 damage and draw a card from my ninja?

Yes and no, depending on the "cunning plan" of your opponent.

There are two ways your opponent can interrupt your gameplan, assuming critter A and Ninja B.
Plan 1: Bounce Ninja B before damage is on the stack. You can go Ninjitsu on his ass, deal 2 and draw a card. No damage from critter A.
Plan 2: Bounce Ninja B after damage is on the stack. You can try to go Ninjitsu on his ass, but it will not change anything. Critter A and Ninja B deal damage, but no card drawing occurs. No trigger as the damage is from the old Ninja, not the one fresh from the monestary.

Exception on plan 2: if critter A happens to have first strike, you can fuck your opponent over twice. If he bounces your Ninja, you can always go japanese fighting style using the Ninja AFTER critter A deals damage. You still can (ab)use your ninja to draw a card. The only way your opponent can prevent you from drawing a card is bouncing with Ninja damage on the stack. He cannot prevent you from dealing full damage though.
