It seems that the WotC FAQ and other evidence from threads on here contradicts my understanding of this card, so I wanted to get a more response from those in the know...

The card:

http://sales.starcitygames.com/cardsearch.php?singlesearch=Chain+Of+Vapor

Quote
* There's never more than one "link" in the chain on the stack at once. Each new copy of the spell is created when the previous one resolves. If any of the spells are countered (either by a spell or ability, or by having an illegal target when it resolves), the chain is broken and no more copies are made.

How I've understood the card to work since its printing is that if I cast Chain of Vapor on my own permanent, that I can make copies (by saccing lands) without passing priority.  Then, once I'm done responding to my own spell, my opponent has the opportunity to stop (by countering, probably) the original or copies of the spells independently, but can't stop the entire link by countering the original CoV.

From the above excerpt from the FAQ, it looks like I was wrong on two assumptions:

1) The original copy has to resolve before I can respond by making more copies
2) Because of this, my opponent will get priority and can disrupt this 'chaining' at any point.

Can someone confirm this, or if I'm off in any of these points, clarify?

Thanks.

AFAIK, you are mistaken and the FAQ is correct.

The FAQ is correct. When you sacrifice a land during the resolution of Chain of Vapor to create a copy, that copy goes onto the stack and both players get priority before that copy resolves. Since the "sac a land to copy" is part of the effect of Chain of Vapor's resolution, you cannot make a copy if the spell doesn't resolve.
