If I have both Gemini Engine and Finest Hour in play, and I attack with Gemini Engine, will I get a second attack step so long as I put Gemini Engine's ability on the stack before Finest Hour's?

(I'm assuming the same goes for Preeminent Captain)

Because these all trigger from Gemini Engine (or Preeminent Captain) attacking, you get to stack to the triggers as you wish. If you put them in the order above, you will indeed have two creatures attacking but still get another combat phase and +1/+1 to Gemini Engine.

Of course only the original Gemini Engine will untap from Finest Hour.

The order you stack the triggers in this case is irrelevant.  Finest Hour's trigger cares whether a creature you control attacks alone, not whether it is attacking alone.  "Attacks alone" cares only that it was the only creature declared as an attacker during the declare attackers step.  That another creature is also attacking will not change anything.

Also, once the trigger goes on the stack, making the trigger condition irrelevant (except for intervening ifs) won't cause it to not trigger.
