So I have 2 Oaths and the opponent has 1 more creature than I do. Do I get to Oath twice on my upkeep or just once? I think I get to do it twice because Oath targets me twice but another person says no I only get to do it once. Can anyone help?

If they only have one more creature than you, both Oaths will trigger, however, only one will resolve successfully. This is due to the second oath trigger being countered because "target player who controls more creatures than he or she does and is his or her opponent" will be an invalid target after the first trigger (assuming you hit a creature). If however, your opponent controls 2 more creatures, you may elect to oath twice.

The first player may reveal cards from the top of his or her library until he or she reveals a creature card. Something that shows up frequently is that you have an Orchard in play.

This allows you to oath twice.

At the beginning of your upkeep both Oaths trigger since your opponent has an extra creature.
Then you give your opponent that second extra creature with Orchard.
Then Oath up your two creatures.

Or even cooler, if your first Oath gets a Terastodon, and you nuke some lands!
