If my opponent has Ivory Mask in play (or any other card that gives him shroud, like True Believer) what happens if i tap the Forbidden Orchard?, do my opponent get the token or they dont?

The "put a 1/1 dude" ability is a triggered ability (begins with at, when or whenever) and that ability goes on stack and either resolves or it doesn't.  Since you have shroud, that ability doesn't resolve.

Actually, the ability won't even go on the stack. The game will see that your opponent has shroud and the triggered ability will just not be put on the stack and that's it. So, the person tapping Forbidden Orchard gets the mana, but his opponent won't get the spirit token.
